Apple Cinnamon Overnight Oats

Make-ahead overnight oats with Greek yogurt instead of protein powder, grated apple and cinnamon: 28 g of protein and 10 g of fibre, ready when you wake up.

Ingredients

  • 40 g / 1 oz rolled oats (porridge oats, not instant)
  • 150 g / 5 oz 0% fat Greek yogurt or skyr
  • 150 ml / ¾ cup semi-skimmed milk, or unsweetened soya milk
  • 1 tbsp (12 g / ½ oz) chia seeds
  • ½ small apple (about 80 g / 3 oz): half grated, half diced
  • ½ tsp ground cinnamon, plus a pinch to finish

Instructions

  1. Grate half the apple straight into a small pot or jar, then add the oats, yogurt, milk, chia and cinnamon. Stir well, so the chia doesn't clump at the bottom.
  2. Cover and refrigerate for at least 4 hours, or overnight. The oats and chia soak up the milk and it sets thick and creamy.
  3. In the morning, stir and loosen with a splash of milk if it's too thick. Dice the rest of the apple, scatter it on top and finish with a pinch of cinnamon. Eat it cold.
  4. To make ahead, mix three pots at once; they keep for up to 3 days in the fridge. Add the diced apple on the day so it stays crisp.
  5. With 10 g of fibre, this is a big step up if you usually eat very little. If your stomach isn't used to it, start with half the chia, build up over a week, and drink water with it.
