Ingredients

  • 1 kg floury potatoes (Maris Piper or russet), about 800 g / 28 oz peeled
  • 2 garlic cloves, peeled
  • 300 g / 11 oz low-fat cottage cheese
  • 150 g / 5 oz 0% fat Greek yogurt
  • 15 g / ½ oz (1 tbsp) butter
  • 50 ml / 3 tbsp semi-skimmed milk, plus a splash more if needed
  • A pinch of nutmeg, salt and black pepper
  • 2 tbsp snipped chives

Instructions

  1. Peel the potatoes and cut them into even chunks. Simmer them in salted water with the garlic for 15 to 20 minutes, until very tender.
  2. Meanwhile, blend the cottage cheese and yogurt until completely smooth, so no curds show in the mash.
  3. Drain well and let the potatoes steam dry in the pan for 2 minutes. Mash them with the garlic and butter, using a masher or ricer rather than a blender, which makes potatoes gluey.
  4. Over a low heat, beat in the cottage cheese mixture and the milk until creamy and hot. Don't let it boil, or the yogurt can split.
  5. Season with salt, pepper and nutmeg, and scatter with chives.
  6. You can make it up to 2 days ahead and keep it in the fridge. Reheat gently with a splash of milk.
