Ingredients

  • 2 salmon fillets (about 130 g each)
  • 1 lemon, sliced
  • 1 tbsp olive oil
  • 1 tsp dried herbs (dill or oregano)
  • 200 g spinach or kale
  • Salt and pepper to taste

Instructions

  1. Heat oven to 200 C (400 F).
  2. Place salmon on a lined tray, drizzle with half the oil, top with lemon and herbs.
  3. Bake for 12 to 15 minutes until just cooked through.
  4. Wilt the greens in the remaining oil and serve the salmon on top.
