Nature's Ozempic Gelatin (High-Protein Panna Cotta)

The viral nature's Ozempic gelatin trick, turned into a dessert worth eating: a vanilla panna cotta set with Greek yogurt, 21 g of protein a serving. No medication involved.

Ingredients

  • 10 g / ½ oz powdered gelatin (about 1 tbsp; sachet sizes vary, so weigh it)
  • 300 ml / 1 ¼ cup semi-skimmed milk
  • 400 g / 14 oz 0% fat Greek yogurt or skyr
  • 30 g / 1 oz vanilla whey protein powder
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 150 g / 5 oz raspberries and blueberries, to serve

Instructions

  1. Pour 100 ml of the cold milk into a small pan, sprinkle the gelatin evenly over the surface and leave it for 5 minutes to soften. Scattering it rather than tipping it in one heap stops it forming lumps.
  2. Warm the pan over a low heat, stirring, until the gelatin has completely dissolved and the milk looks clear of grains. Don't let it boil, which weakens the set. Take it off the heat and stir in the rest of the milk, the honey and the vanilla.
  3. In a bowl, whisk the yogurt and protein powder together until smooth. Pour in the warm milk a little at a time, whisking as you go, so the yogurt stays silky and the powder doesn't clump.
  4. Divide between 4 ramekins or small glasses and chill for at least 4 hours, or overnight, until set with a gentle wobble. They keep for 3 days covered in the fridge.
  5. To turn one out, dip the ramekin in hot water for 10 seconds, run a thin knife around the edge and invert it onto a plate. Top with the berries.
  6. About the name: the nature's Ozempic trend is a spoonful of gelatin stirred into warm water and drunk before a meal to feel full sooner. Gelatin can make you feel briefly fuller, but doctors say the viral claims are overstated, and it does not work like the medication. On a GLP-1 you usually need more protein, not a smaller meal, which is why this version is a dessert that adds 21 g rather than a drink that cuts into your next plate.
  7. Gelatin's protein is collagen, which is low in the amino acids your muscles use most, so the yogurt and whey do most of the work here. Without the protein powder each serving has about 15 g of protein.
