Ingredients

  • 300 g cooked chicken breast, shredded
  • 1 can (400 g) white beans, drained
  • 1 litre low-salt chicken stock
  • 1 onion, diced
  • 2 carrots, diced
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Soften the onion and carrot in the oil for 5 minutes.
  2. Add the stock and beans and simmer for 10 minutes.
  3. Stir in the chicken and warm through.
  4. Season and serve.
