Ozempic Eggs (High-Protein Parmesan Scramble)

Ingredients

  • 2 large eggs
  • 100 g / 4 oz liquid egg whites (from about 3 eggs)
  • 15 g / ½ oz Parmesan, half finely grated and half shaved
  • 1 tsp extra virgin olive oil
  • 40 g / 1 oz baby spinach (a large handful)
  • Black pepper
  • 1 tbsp finely snipped chives

Instructions

  1. Heat half the olive oil in a non-stick pan over a medium heat and wilt the spinach for about a minute. Season with pepper and move it to one side of your plate.
  2. Whisk the eggs and egg whites together until no streaks of white remain. The whites add about 11 g of protein and almost no fat, which is what lifts this above the viral three-egg version.
  3. Turn the heat to low, add the rest of the oil and pour in the eggs. Leave them for 20 seconds, then push them slowly across the pan with a spatula, folding large soft curds rather than stirring. Take the pan off the heat while they still look slightly wet, because they finish setting on the plate.
  4. Fold the grated Parmesan through off the heat so it melts without turning stringy, then top with the shavings, more pepper and the chives. Serve straight away.
  5. About the name: these eggs contain no medication and do not work like Ozempic. Protein and fat prompt your gut to release its own GLP-1 and other fullness hormones, which is why a breakfast like this keeps you full, but the effect is far smaller and shorter-lived than the drug's.
  6. For the Korean "natural Wegovy" version the trend grew from, boil 2 eggs for 8 minutes, halve them and finish with 1 tsp extra virgin olive oil, sesame oil or perilla oil and plenty of black pepper.
